Vegetarian Stuffed Tomatoes
- 3-4 medium/small tomatoes, hollowed out (save the insides and add them to your filling)
FILLING:
- 1/2 cup of bread crumbs
- 1 small-medium onion, diced
- 1 (any color) bell pepper
- 1/4 cup ground flax seed
- salt & pepper to taste
- 1/2 cup of mozzarella cheese
- Parmesan to taste
*For the filling, if you make extra when you make my stuffed onions, you can save half of it and stuff your tomatoes with it the next day.
I used the leftover filling.
Stuff those tomatoes, place on a lightly oiled pan and bake at 350 for about 20 minutes (depending on the size of your tomatoes. Mine were pretty small. |
Serve with your favorite side dish.
