Clean Eating #96: Cheesey Stuffed Onions w/Video

Cheesey Stuffed Onions
Served with Quinoa Spaghetti and Hearty Vegetable Marinara
Enjoy... as much as my husband??  Probably NOT.  This was his reaction:


Ingredients
3 Large Onions
1 medium tomato
1 red bell pepper
1/2 cup whole wheat bread crumbs or ground cereal
1/4 cup ground flax seed
1/2 cup Parmesan cheese
1/2 cup mozzarella cheese, finely shredded


Directions
First, clean out the center of the onion.  I used a paring knife first, then scooped out more with a spoon.  I left about 3 layers of onion on the sides and plenty at the bottom.  Save the stuff you scoop out.
Dice up the remaining onion, red bell pepper and tomato.  Mix together in a bowl.

Add bread crumbs, flax seed and cheeses.

Stuff onions and bake at 350 for about 20-30 minutes until they're nicely browned on the top and the onions are soft.

What I'd Do Differently Next Time:  Seriously?  Did you WATCH the video??  I'm not changing a THING baby... not a THING.

  5. I love finding something totally different. This looks so delicious and not too difficult or time consuming to make. I'll have to try it, thanks so much for posting the recipe and the step-by-step directions. The video is hysterical. Your husband is too funny!
