3 Large Onions
1 medium tomato
1 red bell pepper
1/2 cup whole wheat bread crumbs or ground cereal
1/4 cup ground flax seed
1/2 cup Parmesan cheese
1/2 cup mozzarella cheese, finely shredded
|First, clean out the center of the onion. I used a paring knife first, then scooped out more with a spoon. I left about 3 layers of onion on the sides and plenty at the bottom. Save the stuff you scoop out.|
|Dice up the remaining onion, red bell pepper and tomato. Mix together in a bowl.|
|Add bread crumbs, flax seed and cheeses.|
|Stuff onions and bake at 350 for about 20-30 minutes until they're nicely browned on the top and the onions are soft.|
