Cheesey Stuffed Onions
Served with Quinoa Spaghetti and Hearty Vegetable Marinara
Enjoy... as much as my husband?? Probably NOT. This was his reaction:3 Large Onions
1 medium tomato
1 red bell pepper
1/2 cup whole wheat bread crumbs or ground cereal
1/4 cup ground flax seed
1/2 cup Parmesan cheese
1/2 cup mozzarella cheese, finely shredded
Directions
Dice up the remaining onion, red bell pepper and tomato. Mix together in a bowl. |
Add bread crumbs, flax seed and cheeses. |
Stuff onions and bake at 350 for about 20-30 minutes until they're nicely browned on the top and the onions are soft. And this was him cleaning off MY plate. |
