Clean Eating #85: Easy Hot Spinach Artichoke Dip

Hot Spinach Artichoke Dip
Slightly adapted from this recipe: Alton Brown's Hot Spinach Artichoke Dip

Ingredients

  • 3 cup fresh (or frozen) spinach, finely chopped
  • 2 cans marinated artichoke hearts, drained & finely chopped
  • 2 cloves garlic, finely diced
  • 8 ounces Neuschfatel cheese
  • 1/2 cup sour cream
  • 1/4 cup Olive Oil Mayo
  • 1/4 cup Feta Cheese
  • 1/3 cup grated Parmesan
  • 1/2 teaspoon red pepper powder
  • 1/4 teaspoon salt


Directions:
Soften the neuschfatel cheese, and mix together all ingredients *except Parmesan* thoroughly.
Put in an oven safe dish and bake at 375 for about 20 minutes.
Sprinkle Parmesan on the top.

Serve with some clean chips or crackers.

What I'd Do Differently Next Time:  
Make sure to serve this AFTER a meal or as an appetizer, because this was all GONE in literally 15 minutes and everyone wanted MORE.  It was DIVINE.  I wouldn't make MORE, because obviously it is considered a decadent treat and not a meal, but man, was it GOOD!  Thumbs UP from everyone!!
