Clean Eating #45: Super Quick and Easy Mexi-Breakfast Eggs

Mexican Style Breakfast

With a prep day that includes homemade salsa, this is the easiest dish yet!
My family loves this for a spicy kick in the mornings.  We like our Mexican food!

Ingredients:

  • 1/2 cup homemade salsa
  • 4 egg whites
  • 1 egg
  • pepper, to taste
  • sprinkle of low fat cheese


Directions:
Heat the salsa in a skillet on low-med heat.

  • Mix eggs well and add to salsa.  
  • Add pepper to taste, sprinkle shredded low fat cheese on top.
  • Serve with Clean Guacamole or refried bean dip & Chips
