Mexican Style Breakfast
With a prep day that includes homemade salsa, this is the easiest dish yet!
My family loves this for a spicy kick in the mornings. We like our Mexican food!
- 1/2 cup homemade salsa
- 4 egg whites
- 1 egg
- pepper, to taste
- sprinkle of low fat cheese
Directions:
Heat the salsa in a skillet on low-med heat.
- Mix eggs well and add to salsa.
- Add pepper to taste, sprinkle shredded low fat cheese on top.
- Serve with Clean Guacamole or refried bean dip & Chips
