Clean Eating #98: Vegetarian Parmesan Pesto Style Pasta

Vegetarian Parmesan Pesto Style Pasta

1 medium onion, diced
1 medium tomato, diced
1 bell pepper (I used 1/2 an orange one and 1/2 a yellow one), diced
3 garlic cloves, diced
1 Tbsp Italian seasoning
1 Tbsp Parsley
Pepper & Salt to taste
1/2-3/4 cup of Extra Virgin Olive Oil
Grated or Shredded Parmesan Cheese for topping

Heat the oil on medium heat
add veggies and sautee until soft.
Pour on top of cooked pasta and serve. 

This was GREAT with the stuffed tomato recipe I posted earlier today!  Serve topped with a Sprinkle of Parmesan cheese!

The orange and yellow peppers gave this a sweeter taste than when I just use tomatoes and garlic.  We all REALLY loved this dish, even the pickier kids.  A great, light topping for your favorite pasta!

What I'd Do Differently Next Time:  Oh, I'll probably do a lot of variations on this.  I love sauteed veggies of almost any kind, and the fact that the kids loved it too is an even bigger bonus:)
