Clean Eating #97: Vegetarian Stuffed Tomato

Vegetarian Stuffed Tomatoes

  • 3-4 medium/small tomatoes, hollowed out (save the insides and add them to your filling)
  • 1/2 cup of bread crumbs
  • 1 small-medium onion, diced
  • 1 (any color) bell pepper
  • 1/4 cup ground flax seed
  • salt & pepper to taste
  • 1/2 cup of mozzarella cheese
  • Parmesan to taste

*For the filling, if you make extra when you make my stuffed onions, you can save half of it and stuff your tomatoes with it the next day.
I used the leftover filling.  

Stuff those tomatoes, place on a lightly oiled pan and bake at 350 for about 20 minutes (depending on the size of your tomatoes.  Mine were pretty small.

Serve with your favorite side dish.
