Clean Eating #112: Cheesey Stuffed Vegetarian Pablano Peppers

Cheesey Stuffed Vegetarian Pablano Peppers
Ingredients:
4 Pablano Peppers
2 cups of prepared wild rice mixture (I seasoned mine with Mrs. Dash "Extra Spicy" seasoning)
Slices of Mozzarella Cheese
Salsa (I used my homemade salsa in the freezer)

Directions:
Split the Pepper down the middle.
Remove the seeds with a fork and dump them out.

Stuff half way with cooked rice mixture.
Top with a tablespoon or two of salsa

Add a slice of mozzarella Cheese & extra Salsa if you want.
If you have room, do the layers again.

Put in a pan and bake at 350 for 20-30 minutes depending on the size of your peppers.


The reaction?  Priceless
